- 1 whole chicken
- 4 tbsp olive oil
- 1 whole clove garlic
- 3 tbsp Everything Chicken Seasoning
- 3-4 cups mixed vegetables (potatoes, carrots, peppers, jalapeno)
- Fresh chopped cilantro
Instructions:
- Preheat the oven to 450°F.
- Wash and chop the potatoes, carrots, peppers, cilantro. and jalapenos. In a bowl, drizzle with 2 tbsp of olive oil, and add 1 tbsp of the chicken seasoning to the mixture. Toss to coat, then spread them evenly in the bottom of a 13x9 baking dish.
- Rub the chicken with the remaining olive oil, then rub with the remaining chicken seasoning.
- Place the chicken side up on top of the vegetables. Place the pan in the oven. Cook for 12 minutes at 450°F.
