How to Make Instant Pot Beef Kabsa
Ingredients:
- 2 pounds beef ribs or shanks
- 2.5 cups basmati rice
- 4 cups water
- 2 cups tomato sauce
- ½ large red onion, chopped
- 4 cloves chopped garlic
- 3 tbsp kabsa spice
- 2 tsp cumin
- 4 tbsp lime juice, or the juice of 2 limes
- 1 medium cinnamon stick
- 3 bay leaves
- 5 tbsp olive oil
Instructions:
- Add olive oil to the Instant Pot.
- Add half the garlic and onion to the pot and saute until it becomes translucent.
- Add the beef, kabsa spice, and other spices/herbs. Stir gently.
- Pour in the water and tomato sauce and gently mix.
- Turn off the saute and cover the instant pot with the lid and pressure valve. Cook the beef for 30 minutes at high pressure.
- Caramelize the remaining red onion in a separate pan as the beef is cooking. Set it aside after it is done.
- Once the beef is done, instant release the pressure. After stirring, add the rinsed basmati rice and caramelized onion to the pot.
- Cover with the lid and let the mixture cook for 15 minutes.
